Summer kitchen fun

The school summer holidays are drawing closer and we shall be looking at ways to entertain the kids. Why not try some simple fun recipes such as yoghurt lollies to keep them entertained. They are quick, nutritious and great for a warm day!
Here is a simple recipe for yoghurt pops, which can be made with different fruits, blueberries or grapes work well. For a treat they can be made with crushed biscuits in the base.
You will need small paper cups for the moulds or small plastic pots also work well. This recipe makes 12.


What you need:
1 cup or 150g red grapes (quartered) or blueberries
2 cups or 300ml natural plain yoghurt
2 tbsp honey
6 ginger or plain biscuits
30g melted low fat spread
What to do:
Place the biscuits into a plastic bag and ask a grown up to tie a knot.
Bash with a rolling pin until like breadcrumbs.
Melt the spread and mix with the crushed biscuits.
Squash a thin layer into the bottom of each paper cup and flatten.
Ask a grown up to help quarter the grapes or use whole blueberries and set aside.
Weigh out the yoghurt and stir in the honey and fruit.
Spoon onto the top of the biscuit base and put a lolly stick in the middle of each.
Freeze for at least 1 hour.
