We all love pancakes, well we certainly do in our household. It is a great occasion to make some pancakes with the kids. Whisking the mixture is so much fun and pancakes are a quick reward for kids as they dont take too long to make. I have made a fantastic recipe using spelt flour for added goodness and these can be used with a sweet or savoury topping. Lemon and sugar is always a winner or for something more nutritious how about freshly squeezed oranges or chopped up fresh fruit.
Spelt pancakes (makes about 10)
What you need:
60g spelt flour
50g plain flour
275ml semi skimmed milk
vegetable oil for frying
What to do:
Measure the flours into a mixing bowl.
Crack the eggs into a well in the middle of the flours and mix.
Measure the milk and gradually add a bit at a time and whisk.
Continue whisking until all the lumps have gone (may require some adult help).
Heat a teaspoon of oil in a frying pan and pour a few tablespoons onto the pan and swirl.
